  1.                      TROPICAL SPINACH SALAD

  4. 20 oz. pineapple chunks in juice
  5. 3 slices cooked crumbled bacon
  6. 1 bunch wasted, stemmed spinach
  7. 1/2 c. sliced celery or water chestnuts
  8. 1/4 small sliced red onion
  9. 1 T. cider vinegar
  10. 1 T. oil
  11. 1/4 t. crumbled oregano
  12. salt and pepper to taste
  13.  
  14.           Drain pineapple, reserving 2 T. juice.  Toss first 5
  15. ingredients.  Combine reserved juice with remaining ingredients. 
  16. Add to salad and toss.  Serves 4 to 6.
